Beer Batter ideas for Fish Fry!?
I have me a freezer full of panfish (crappie, bluegills, and perch). Tonight I’m going healthy and making a batch in the oven so the old lady lets me do a fry next time. Plus the burner outside needs to be fixed, and I didn’t want to stink up my house.
Anyways, the thought of a fish fry got me wondering…what are your favorite beer battering tips? I’ve done plenty of them – so I know the basics…roll the DRY filets in a flour/salt/pepper/garlic powder combo and then hit the batter. I have the consistency down. I read that the beer should be opened and allowed to go “flat” 24 hours before hand – is that true? Anyone have any luck making “psuedo” beer batter recipes? I’ve been dipping it in a beer batter, then lightly rolling them in bread crumbs or other seafood breading and it makes it SOOO much better 
Any other ideas/tips beyond the basics?
I make up a large pan of Cajun seasoned flour, then take 1 cup of that and mix it with a cold, cheap, light beer. The cheaper the better. I don’t defrost the fish all the way, just to the point where they’re still just a bit frozen in the middle. I don’t dry them first, just lay them in the flour and pat the flour in well, then while holding the batter bowl over the oil, dip the floured fish in the batter and it goes straight into the oil. And disposable gloves are an absolute must! I can’t tell you how many boxes of gloves I’ve gone through in my career. Otherwise you’ll spend a lot of time scrubbing the batter off your hands.
Now, I have heard about using flat beer, but I never will. The fizz in a cold fresh beer makes the batter like a tempura. The coating always comes out light and puffy and tender.
